What makes this coffee so special? Anolis Honey Coffee is not an ordinary coffee. Its secret is in Prolonged Fermentation: the grains rest in special containers under strict control, developing complex flavors reminiscent of wine. They are then dried with their own mucilage (the "honey" of coffee), absorbing natural sugars not found in traditional washed coffee.
Tasting Notes (Cup Profile): Get ready for a cup with body and character. You will feel a marked sweetness like panela or honey, combined with notes of red fruits and an elegant winey touch. It is an intense but friendly coffee.

Does it have honey added? No. It's called "Honey" because it's dried with the grain's natural sticky mucilage, which gives it a naturally sweet flavor, but it's 100% coffee.
What do you mean by vinous notes? Thanks to the long fermentation, the coffee develops an acidity and body that are subtly reminiscent of a good red wine, very different from supermarket coffee.
Is it acidic? It has a fruity acidity (like that of a cherry or blackberry), but it is very balanced by its high sweetness.
